Our tech team has launched updates to The Nest today. As a result of these updates, members of the Nest Community will need to change their password in order to continue participating in the community. I saw you post below about pumpkin cupcakes - what recipe did you use? I am going to make some and am not sure what one to use!

  • yeah!  I used the winning cupcake in this blog post.  I changed a couple things though and am not entirely sure what the final recipe was, lol.  But here are some things (I baked a mini one and tasted it a couple times as I did this):

    - I used the whole can of pumpkin because my first trial one didn't have much pumpkin flavor and I didn't know what to do with the tiny bit left over

    - didn't add the ground ginger because I don't like it and don't keep it around (I use fresh ginger in sautes, but don't like it in baking).  Anyway, if you like it use it, but in case you don't, they turned out fine without it

    - because I added the extra pumpkin, I then had to mess around adding back in cake flour to get the right texture (I think I also added back in just a tiny bit of baking powder/soda).  If I could do it again, I might have tried adding less buttermilk to balance it because it was a pain figuring out how to get the texture back without ruining it.  In the end, they totally turned out fine and were fairly forgiving of my messing around :)
