made muffins and a loaf lasdt night

i made these last night - you don't taste the sweet potato, which meant my husband would eat it.Sam loves sweet potatoes and bananas, so I thought this was perfect. Ava gobbled one up this morning too. And I finally made a muffin that was light and airy and not dense!!!! Tip from what's cooking - don't over mix. I used a hand mixer for the wet ingredients to be sure it was well blended, and then used a spatula to fold in the flour/dry mix until just incorporated.

I made 12 muffins with liners and put the rest into a loaf pan coated with butter and flour (cooked 15-20 min longer than muffins) - no sticking.

I skipped the nuts and chocolate. And I would love to experiment a bit and try agave in place of the sugar, or cinnamon apple sauce for some of the oil, or whole wheat flour - some way to make them a bit healthier. I might even attempt them as mini muffins sometime too - for snacks.
