I need your best chicken app recipe
I always have a tough time coming up with apps with chicken (other than chicken salad) for parties. So far, my menu has a cheese and antipasto platter, mini crab cakes, homemade meatballs with ricotta and basil, roasted shrimp cocktail. I need about 2 more items, one being chicken and one vegetarian. I'd like to avoid dips and keep it more upscale.

What about some sort of chicken in phyllo cups or wrapped in phyllo? I know 90% of people like that buffalo dip, you could class it up by putting it in the phyllo cup with blue cheese crumbles on top and a celery stick. Or mix together ground chicken, spinach, feta, and pine nuts and wrap in a phyllo sheet.
I think part of the issue with chicken is you either need to shred it, which isn't fancy, or have a chunk which can dry out.
For vegetarian you could do mini quiches. I use a muffin tin and squish premade pie crust in the bottom. Bake the crust for a bit (425 for 5 mins or so), then put some shredded carrots/onion/zucchini/cheese/whatever in the bottom. Scramble up your eggs with a bit of dry mustard and pour over the top. Bake at 325 until set ~20-25 mins. (1 box of crust makes + 12ish eggs = 18 mini quiches)
One of the reviewers said she uses rye and herb Triscuits with it. That sounds like it would work well.
I like your curry chicken idea. Endive leaves are certainly a step up in the presentation department.

I have made this before and it went over well.
1 pizza crust rolled out, spread cream cheese over it. Take chicken from a rotisserie chicken and shred the meat, mix with hooters buffalo sauce (or any kind you like) and then spread over the crust. Top with either shredded colby jack cheese or blue cheese and bake at 350 for how ever long the crust package says. Use a pizza coutter to slice into individual pieces before serving.
You could also cut the crust in half, spread the mix inside, roll them like pinwheels and cut them into individual pieces, then bake them.
I don't have a recipe but one of my favorite chicken apps to order at a restaurant is satay chicken skewers with peanut sauce to dip them in.
Or I'm not sure how upscale it it, but mini buffalo chicken wings on a tray with ranch or blue cheese and some celery sticks on the side definitely goes over well at the events I have banquet served. (Might want to provide a few wet wipes!)

I often make buffalo chicken nuggets. cut chicken breast (against the grain) into strips or chunks. marinade in buttermilk overnight. then coat in panko crumbs and bake in oven. Once they are done toss them in Franks Hot Sauce + Butter mixture (recipe on Frank's bottle). These can be skewered individually or served in a bowl/on a platter with toothpicks. Serve with a side of ranch or blue cheese dressing and carrots + celery.
Or just marinade chicken cubes/strips in italian dressing overnight. Then skewer, bake, and top with herb (i like sage + parsley) butter. The butter melts and make a tasty sauce.
Chicken wonton cups
Make rice in a rice cooker with a pinch of shredded ginger
Marinate diced chicken pieces in a typical hoisin/teriyaki sauce overnight (my preferred - Very very Teriyaki - it's a white jar with blue writing).
Thinly dice red pepper and shreds of carrots.
Cook/saute chicken pieces, add red pepper, carrots and minced garlic along with salt and pepper.
Combine chicken mixture and white rice. Set aside to cool.
Using mini-muffin pan, spray pam, take 2 wonton wrappers - lay one diagonally (make sure they are flat on the outside circle portion of the muffin area), lay second one the other diagonal direction (to make a cup). Bake 350 for 8-10 minutes.
Spoon in chicken mixture, snip green onion over top of each. Easy, tasty and lastly, ability to be a room temperature for awhile. Not a dip or a spread and eaten without utensils.
Sounds like it's a lot of work but it's not at all. Really really easy. Can be made night before but I like to do it right before a party so the rice/chicken mixture is still a little warm before going to room temp
