Gluten-free potluck recipes needed

We have a work potluck next week and one of my co-workers is gluten free. I don't know if everyone else knows, but I want to make something that she can eat.

It's a dinner thing and we have about 20 women (no men) to feed. 

Ideas?

  • My brother has celiacs, and my go-to party food for him is artichoke dip with tortiLla chips. Are you looking for appetizer, or main dish kind of stuff?

  • I got a great gluten-free flour mix at the grocery store. I forget the brand, but it was in a gold bag and I got it from Safeway or King's. I used it to make pumpkin blondies and they were delicious and easy!

  • What kind of food do you want to make? DH & I are gluten free and I have plenty of recipes. Things that I usually make in big batches for potlucks are usually pasta dishes using rice pasta.

    Depending on the time of year I'll do Italian pasta salad with rice rotini and olives, pepperoni, peppers, and tossed with gluten free Italian dressing. 

    For a potluck we're going to this weekend I am bringing gf chicken alfredo bake. You could also do a soup if you are wanting to do dinner stuff. 

    Fro desserts I make up gf apple crisp, honey roasted nuts, I also have a recipe for gf peach & green tea cupcakes.

  • Oh sure, I should know what kind of food I want to bring. lol obviously I haven't gotten that far. the apple crisp sounds good, maybe I'll go that route!

  • Gluten Free Apple Crisp (or Mixed Berry )

    Preheat oven to 350 degrees

    Stir topping ingredients together in a bowl:

    1- 1/4 cups gluten free rolled oats

    1/2 cup GF flour mix (I use Red Mill)

    1/2 cup brown sugar

    2 teaspoons cinnamon

    a dash each of allspice and nutmeg (not too much!)

    1/2 teaspoon salt

    Stir dry ingredients together then add:

    4 Tblsp unsalted butter, cut into small pieces

    1/4 cup of grapeseed oil

    Mix all together until consistency is even and blended

    I use a 9? x 13? pan and fill it with about 12 cups of peeled and sliced Granny Smith (sometimes we'll do half and half with Fiji so it isn't as tart) apples.  This is about 10 good sized apples.

    In a small bowl mix together then blend with apples in baking dish:

    2/3 of a cup of apple juice

    1/4 cup agave nectar

    1/2 teaspoon cinnamon

    Sprinkle oat topping over apples.  Bake approximately 50 minutes.  Different varieties and different ripeness apples might cook faster, so check at 40- 45 minutes.  When you remove the crisp from the oven, pat the topping down into the apples some so that the topping will pick up the moisture from the fruit evenly as it cools.

     

    To do a berry crisp instead: (really yummy)

     

    Changes from Apple Crisp Recipe:

    Topping:

    Use only 1/2 teaspoon cinnamon

    NO allspice or nutmeg

    Fruit:

    4 pounds fresh or frozen berries instead of apples

    Instead of the apple juice mixture:

    Mix into berries in baking dish:

    2 Tblsp GF flour mix

    1/3 cup of sugar

    Stir and mix thoroughly with berries.  If frozen, make sure berries are mostly defrosted before adding the agave nectar.

    Add 1/4 cup of agave nectar to berries and mix thoroughly.

    Sprinkle topping over berries and follow that part of the directions for the Apple Crisp.

    Cook approximately 40 minutes but test early to be sure!
