Cherry Tomato Poppers
1.5 (16 oz) packages bacon
2 pints cherry tomato
1/2 cup mayo
1/2 cup chopped green onion
-Cook bacon until crisp. Drain on paper towel, crumble, and place in a bowl.
- Using the tip of a small knife, core tomatoes. Remove some pulp and discard.
- Using a small knife, stuff a portion of the mixture into the tomato.
- If tomatoes tend to roll, slice a thin layer off the bottom
The tomato is a pain in the butt. I've tried figuring out how to get the same tomato/filler ration in a different way, but haven't yet. The grape tomato is a bit easier to work with, but these really are worth the annoyance. They look pretty and taste great. (and I don't even like tomatoes)

I have not used the bits, but I have used the "precooked" bacon. You know the stuff you just have to microwave for just 10 seconds a slice? I figure one box is like one pound because you don't have the waste. I actually use that bacon for a lot of things.

I use it on regular tomatoes to cut the stem part out, but have never tried it on cherry tomatoes. Might be worth a shot...
