Would this freeze well?

A fancy version of scalloped potatoes?  It has lots of whipping cream and a little bit of boursin cheese... 

I've never frozen potatoes before...  I'm trying to make Christmas eve and Day a breeze and doing as much as I can now. 

If this wouldn't work- any other ideas for a potato dish I could make ahead?

  • Well, I have frozen boxed scalloped potatoes before, but they probably have something in there that keeps the sauce from breaking - that would be the only potential prob I could foresee - and If you got it really mixed together well and not too soupy, I would think you could avoid it.

    Some people claim that potatoes change texture when frozen, but I freeze just about every potato we end up eating in already prepared form, and never have an issue.

    I would try it - maybe just have a little extra sauce or even just some breadcrumbs and cheese to sprinkle over the top on the big day.

  • I wouldn't freeze potatoes, IMO they get a mealy texture. Can you assemble it two days before and just bake it the day before/day of?
