What do you eat on Christmas morning?

For breakfast? Usually not much because we'll usually have a big lunch/early dinner. I know a couple of years my mom made crepes though. She didn't put stuff on them though except a little sugar sprinkled on top or fruit.

I usually make a crustless veggie quiche and mimosas!

My mom's christmas tree cinnamon rolls. She arranges her rolls in the shape of a Christmas tree, ices it, then sprinkles green sugar on then followed by scattered red hot candies .... Yummy !

We (me and my H) don't do anything special, I'm usually up before he is and will make my own breakfast. Maybe I'll do Christmas shaped pancakes for me or something, hah. In two years or so, we'll think of a breakfast tradition. One of my uncles & aunts does eggs benedict w/fresh baked biscuits.

Strawberry crepes with custard filling.  I've been making that on Christmas morning since I was 19.

Oh, DH's family has a tradition of having gin fizzes Christmas morning. They have blintzes, too. Those are basically marscapone or ricotta cheese filled crepes:

Cinnamon-roll coffee cake.  Usually.  If I feel like it. If not, we have belgian waffles-from-a-mix.

Our tradition has been eggs benedict and fried potatoes with fresh fruit at my mom's house on Christmas morning for over 10 years. I don't know if we will continue this once Rosie is into Christmas morning and Santa presents.
