Holiday Pasta Salad Recipe Please...

HI!  Does anyone have a great Pasta Salad recipe to take to a Christmas Party this week?  Its potluck and I got stuck with this request...

  • I did this for a potluck at Thanksgiving.  It's not holiday, but it's good and went over well.  I do wing it a bit.  I don't know if it's my artichokes, but I like a little more acid in my pasta.  So I drizzle some balsamic vinegar or vinagrette on it.

  • I don't have any foggy idea what would qualify for a holiday pasta salad (add little strips of red & green peppers?), but this is tasty and zero effort.  A friend brought it to a potluck and I had no idea it was a kit.

    A Holiday Salad requirement....ha!

    Orzo Pasta Salad

  • I'll list my pasta salad recipe but keep in mind I'm not one to measure when I cook.  I can just eye ball it so I'll just give you the list of ingredients and you can make it to taste.  Here ya go:

     Tri colored pasta, raw broccoli florets (stems removed), grape or cherry tomatoes, chopped cucumber (seeds removed), shredded or grated parm cheese, sliced black olives, extra sharp cheddar or colby cheese cut into small cubes, coarse ground pepper, and italian seasoning.  I mix all these ingredients in a bowl and toss with zesty italian dressing to taste (Kraft).  I usually will bring a small bottle of the dressing with me just incase folks may want to add a little more.

    I do pretty much the same, but I steam the broccoli (and cut into tiny pieces), add steamed carrots (cut into tiny pieces), ham (small cubes) & red or green peppers as well.  I skip the italian seasoning & olives.
