Cookie exchange ladies....what did you bring?

And post the recipe!

I brought the Peppermint-Chocolate Sandwich cookies

I made them much smaller than the 2.5" cookie cutter that the recipe uses.  That would make huge cookies!  A few other things I did differently:
1. I used dark chocolate instead of semi-sweet for the filling

2. I did a 3:1 chocolate to cream ratio for the filling instead of the 4:1 in the recipe

3. I put the firmed ganache (filling) into a big ziplock bag and piped it onto the cookies to fill instead of using a spoon or spatula

4. There is also no need to freeze the filled cookies.  Once they were all filled the ganache had set up just fine.

  • I didn't get any of yours.  :*(

    I brought chocolate chip cookies (stack of three in saran tied with a purple ribbon).  I used the recipe on Pinterest for the alleged world's fluffiest choco chip cookies.  It is on my Yum! Food pinboard.

    My kiddo loved the choco chip cookies! You can never go wrong with those in my book! :)

    I brought the fudge and it's super easy to make:

    1 1/2 sticks butter

    5 oz evaporated milk

    3 cups sugar

    1 bag mini choco chips

    1 tsp vanilla

    Melt the butter, milk, and sugar on medium heat until boiling. Remove from heat and add choco chips and vanilla. Stir quickly with a whisk until chips are melted. Pour into a pan (I used the rectangle size that's just smaller than 9x13) and let it set for a few hours or overnight.

  • In addition to the fig, I also made chocolate peppermint crinkle cookies. they had the powdered sugar. (Dec. Martha Stewart). 

    I think next year we need to make 10 dozen cookies to ensure we can have some of everyone's :) Or maybe a full gross. We should start baking now!

  • I made the mint chocolate chunk cookies, browned butter chocolate chunk (based on these cookies with chocolate chunks, browned and cooled butter, and 1/3 cup less flour), and the fortune cookies (based on this recipe).

  • I was also happy to see the fig cookies - they were delicious! As were rayskit10's brownies. Sadly, both are gone. But at least that's as far as I've gotten Smile

    And odear, your cookies are almost too pretty to eat.

  • I made the chewy ginger snaps, from this recipe.

    I haven't sampled nearly enough cookies yet, I'm going to have to work on that tonight.  Big Smile

    My big boy is bounding towards 3! Hoping to add a sibling. image Hipster dog is not impressed.
  • Peanut butter chocolate chip cookies, they were in a plain treat bag sealed with scotch tape.

    Peanut Butter Chocolate Chip Cookies

    Adapted from BHG

     

    ? cup peanut butter

    ? cup butter, softened

    ? cup granulated sugar

    ? cup packed brown sugar

    ? teaspoon baking soda

    ? teaspoon salt

    1 egg

    ? teaspoon vanilla

    1 ? cups all-purpose flour

    ? cup chocolate chips

     

    In a large mixing bowl beat peanut butter and butter with electric mixer on medium to high speed for 30 seconds. Add granulated sugar and brown sugar, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in chocolate chips.  Cover and refrigerate dough about 1 hour or until easy to handle.

     

     Preheat oven to 375 degrees F. Shape dough in 1-inch balls. Place balls 2 inches apart on an ungreased cookie sheet.  Bake about 8 to 10 minutes or until edges are lightly browned. Transfer to wire racks. Cool. Makes about 3 dozen cookies.

  • I'm sad.  I didn't get o'dear's or melrrr's fig cookies. Crying  I got 3 sets of doubles and 3 sets of the Chocolate chip cookie dough truffles.  I still had a great time though!!!

  • I made double chocolate with dried cherries.  They were okay, not great.  Not worth sharing the recipe.  However, I did make an awesome punch.  That's worth sharing...

    2 bottles prosecco
    1 cup dark rum
    4 cinnamon sticks
    5 cups cranberry juice
    5 cups orange juice
    cranberry ice cubes (fill ice cube tray with cranberries, cover with water and freeze)

    (I did have to make some alterations as we started to run low after the 4th batch.  I used pomegranate juice, pineapple orange juice, and coconut rum and no one seemed to notice)

    It is not a big deal.  I didn't figure it out until I took everything out of my basket and looked at them one by one.  My backside does not need any more cookies.

    These were one of my favorites!! I had one and then hid the other two so DH and kiddo couldn't have them! :) So glad I have the recipe now!

  • I made the peppermint brownies. I used boxed brownie mix because it's better than my homemade ones (better than most, in fact. I have never had a homemade brownie that rivals the Ghirardelli brownie mix). Here is the frosting and glaze recipe, adapted from Cooking Light.
     
     
     
    Mint layer:2 cups powdered sugar1/4 cup butter, melted $2 tablespoons fat-free milk $1/2 teaspoon peppermint extractdrops green food coloring $Glaze:3/4 cup semisweet chocolate chips $3 tablespoons butter To prepare mint layer, combine powdered sugar, 1/4 cup melted butter, and next 3 ingredients (through food coloring) in a medium bowl; beat with a mixer until smooth. Spread mint mixture over cooled cake.To prepare the glaze, combine the chocolate chips and 3 tablespoons butter in a medium microwave-safe bowl. Microwave at HIGH 1 minute or until melted, stirring after 30 seconds. Let stand 2 minutes. Spread chocolate mixture evenly over top. Cover and refrigerate until ready to serve. Obviously, I crushed and crumbled candy canes on top.Since most of you bake you  probably already know this, but just in case: With the frosting and chocolate glaze, there is almost no way to get a neat cut unless you run the knife under hot water between slices.

    DH doesn't follow directions well.  He unwrapped one of these, took a big bite and said "these aren't cookies".  Um, no, they aren't.  See that piece of paper that you had to remove to unwrap the bag that tells you how to make hot chocolate with it?  Boys.
