I'm catering a party this weekend and I need some help with the quantities of items on the menu. Typically it's pretty cut and dry, but this time it's more of an open house and I don't want to make a ridiculous amout of food and have a ton of leftovers. They are expecting 60 guests.
Here is the menu:
Antipasto Platter - 3 cheeses, 2 meats, roasted peppers, marinated artichokes and olives. I'm pretty much going to make 1 platter for 60...I've done this before and I just get enough to refill it once.
Roasted Shrimp Cocktail
Caprese Skewers
Mini Crab Cakes
Curried Chicken Salad on Endive Leaves
Meatballs with Ricotta and Basil
Cinnamon Sugar Roasted Pecans - to be dispersed throughout the party
Cake (it's a bday party for 2 people)
my initial thought was to do 100 bites of each item with maybe only 60 or 75 of the crab cakes since not everyone loves crab. But, i just sort of threw that number out there. I know the general rule for parties in terms of bites per person...i'd just love someone else's input. Thanks!

Two questions: What time is the party and will alcohol be served? I've done open house parties like this before - if it's come to celebrate X's birthday, have a drink and a few munchies - and NOT over the dinner hour per se, I'd say 60-65 of each is plenty, 100-120 of the meatballs (most people grab a few of these) with 50 for the crab.
If 60 people show, that's 8 per person not including cake, alcohol (or other bevvies), the antipasto platter or the roasted pecans. Most people might have 1 of each, and grab a few of something else that they really like....
Your menu is also leans more toward protein...so I don't think you need to make as many.
Given that you don't want leftovers, I think you don't need to slave as long in the kitchen!!

Yes, the timing of your open house changes things. I'd also stick with your original amount. You may want to have some play on crudite or something; for those that don't eat meat OR eat shellfish (or like me, allergic to shellfish - so sad!!)
