Sides for Beef Tenderloin
Does anyone have fun side dish recipes that pair well with beef tenderloin?
I'm getting tired of roasted brussels sprouts.
It's for christmas dinner, but we are a pretty adventerous family and all the "traditional" dishes will be taken care of on Christmas Eve.

We have tenderloin every year for Christmas dinner.
This is an older recipe, but very good, and very tasty. Sausage zucchini casserole
We've also made a spinach gratin and these carrot ribbons.
This year I'm making these potatoes instead of the usual mashed potatoes.

How about a cauliflower gratin? Ina Garten's recipe is fantastic! And instead of roasted Brussels sprouts, maybe roasted asparagus? That's a favorite around our house.

This looks great! I dont know if I'd be able to figure out a way too cook it simultaneously with the tenderloin, though. Have you ever baked it and then reheated?
I've never made it. Do the reviews say anything? They can be really helpful.

I like a simple, roasted veggie asparagus, brussels sprouts, broccoli etc.
I also highly recommend Ina's Mustard Horseradish Sauce.
