I'm looking for some new Christmas cookie ideas, does any one have a easy recipe they enjoy that they'd like to share?

Mine is pretty simple, and they aren't really Christmas cookies.
Follow the Toll House recipe for chocolate chip cookies. Add carmel bites (can find at Walmart and some grocery stores.) We get a lot of raves on them.
Also Mint Chocolate Chip Cookies. Use Betty Crocker sugar cookie dough mix. Follow directions for drop cookies. Add crushed Andes mints and chocolate chips. Add 1 tsp mint extract and seven drops of green food coloring. Bake for 7-9 minutes. My brothers are weirded out by the green, but again they are a huge hit at holiday parties.
