MIL asked what she could bring. So I sent an e-mail telling her what sides I was thinking. Then I said I was thinking beef, but if sFIL wasn't eating it I'd do a turkey. (He had gastric bypass so his diet is jacked up.) I told her she could fill in with whatever she felt like making. MIL replied that he isn't eating much meat at all so make whatever. I do know that he loves shrimp cocktail So......
Nibbles: shrimp cocktail and a cheese platter (something to tide over from a big breakfast and an early dinner)
Pumpkin soup to start
Main: beef tenderloin (sFIL can have more shrimp), rosemary mashed potatoes and yams, bacon wrapped green beans, and crescent rolls. MIL is bringing lime fluff
Dessert: homemade cheesecake and cut out cookies. MIL said she'd bring haystacks.
I found some of their beloved diet snapple peach tea that they can't live without too.

I have not tried to cut the recipe, but I think you could probably go for 2 cans and put a couple more beans in. Frankly, DH and I can eat a whole pan pretty easily
so I just make them and we eat as leftovers or a snack. I only make them a couple of times a year for that reason.
I have made them up to a day ahead and still had good results- they just need a bit longer to bake. The temp is also a little fudgeable which is good if you don't have 2 ovens.
