Last night we made a mac & cheese dish with chicken and bacon. It was mostly good with tweaks we made as we went (doubled the amount of cheese, added way more bacon than it said, didn't put in some of the spices like dill that we thought was odd). It mostly came out well... with the exception of the fact that the sauce includes 1/3 cup of cream of mushroom condensed soup, and the mushrooms just didn't work. The rest of the sauce is 1 1/2 cups milk, flour heated in oil to thicken, and cheese.
I don't cook with soup much - can I just substitute cream of chicken for the cream of mushroom so I won't have chunks of mushroom? Or will that totally change the flavor? Do they make other cream-of-something-that-doesn't-gross-me-out that I should use instead?

Thanks! It starts with a small roux-like thing with oil and flour, but not a whole lot so maybe I'll start with more roux and less soup.
That substitute looks good, though! Much more appealing to me than canned soup.
