Chili recipe please!

Do you have a chili recipe you love?  I have yet to find a go-to recipe.  I'm not a fan of chili that tastes real "tomato-y".

Thanks!

Re: Chili recipe please!

  • This is by far the best Chili I've ever had - I get rave reviews by all everytime I make it!  You can easily modify (I omit the green peppers).  You could leave out the Tomato Juice also.

     Ingredients:
    1 lb  - Ground Beef
    1 lb - Italian Sausage
    1/2 lb- Bacon
    1  - chopped White Onion
    1/2 - Green Pepper (diced)
2-15oz cans dark red kidney beans
1 - 16 oz. can light red kidney beans
    1 - 16 oz can pinto beans
1 - 16 oz can pork and beans
    1 - 15 1/2 oz can sloppy joe mix
    1 - 14 1/2 oz can diced tomatoes (drained-reserve juice)
    1 can - Tomato Juice
    1/4 c. Brown sugar
    1 Tbs - Worchestshire
    1 Tb - Garlic (minced)
    1 Tb - Oregano
    2 tsp - Cumin
    1 tsp - Salt
    1 tsp - Pepper
    1 tsp - Basil
    1 tsp - Cayenne Pepper
    1 tsp - Paprika
    1 tsp - White Sugar
    Chili powder to taste

Brown ground beef, sausage, onion, bacon and green pepper. Drain. Combine meat mixture with remaining ingredients in a slow cooker. Use 1/2 of tomato juice. Cover and cook on high until chili is heated through. (about one hour) Reduce heat to low and cook 2-4 hours. Add remaining tomato juice if needed.

  • Generally I just do the following as a base and then add spices/extras as the mood strikes me:

    Tomato soup concentrate

    tomato soup can of beer

Leftover steak or stew meat - 1lb

1lb ground beef, browned with a few strips of chopped bacon, onions, green peppers, a couple of minced garlic cloves, worchestershire. Deglaze with enough beer to pull up the crunchies and add to the crockpot/dutch oven

Whatever kind of beans we have in the pantry. 1-ish cup.

    Sometimes 1C corn

1 taco seasoning packet (yes I know that's cheating)

1 jalapeno chopped with ribs and seeds removed  (it's not hot/spicy - just kicky)

a few shakes of Franks hot sauce

I toss in a cup or two of mashed whole tomatoes but you can leave that out.

Add sugar or cocoa mix as needed if it's acidic/bitter - I like brown sugar
