Okay, not sure about the election theme part of this dish, but a good way to serve veggies not messy is a cold veggie pizza. My mom would always make it for cast parties in Indiana, but a friend of mine (from Wisco), made some for a dinner party out here, and it was a hit.
Here's a recipe that sounds about right (though neither my mom nor friend uses cheese - particularly surprising for the friend from Wisco! lol...):

Another fun and easy dessert: Buckeyes!
Those are the peanut butter balls dipped in chocolate, and of course, you can name them Swing State Buckeyes or something clever
