**Tarheels**
Thanks for the Texas Caviar recipe...it was a HUGE hit at the party. It was the perfect light, veg friendly and colorful addition to the menu. I got RAVE reviews.
I pretty much followed your recipe and did minimal salt bc we served with tostitos scoops, which have plenty of salt. ate alone the dip didn't have enough salt, but if ate with the chips, it was perfect. i also used about 1 smaller bunch of fresh cilantro and that really gave it a lot of fresh flavor.
and here's a TMI item from the party...one guest loved it so much she clogged my sister's toilet and it overflowed, complete with corn bits all over the floor. yep...it was super awesome. i will never get that image out of my head. haha.

Glad it was such a hit! I do love it. You now know that it makes a ton, so you can imagine when I chuckle when DH asks me to make a batch just for him to have in the fridge to snack on lol. He'll eat on it for over a week.
