s/o poll: Healthy, on-the-go breakfasts

If you have some go-to ideas or recipes, I'd love to see them. I'm looking for things that are healthy/unprocessed, preferably high in protein, and bonus points if they're vegetarian or can be easily made vegetarian. Thanks!

  • Chobani fruit flavored Greek Yogurt. They are filling, they are easy and they are really tasty.
  • Breakfast burrito.  Use a whole-wheat or whole-grain tortilla, load it up with veggies, scrambled egg, and/or tofu, and a little salsa.

    If that's too messy, I've got a couple recipes for (healthy) breakfast cookies that are pretty decent.

    I'm seeing some freezer breakfast burritos (to make at home) that I might try. Would you mind posting the cookie recipes?

    This one just came onto my radar yesterday - it's actually vegan, and this particular website has some great recipes in general.  I haven't made it yet, though.

    Also, this one is one that I've made a few times.  It's awesome. 

    Finally, these are my personal favorites.  They are amazing with dried blueberries (even though the recipe calls for raisins or dried cranberries)

  • Breakfast sandwiches.

    Get english muffins-toast them

    put eggs or egg whites in a ramekin cup (spray with Pam so it does not stick) for ~45 secs

    warm up Morning Star patty or slice of tofu (or for nen vegetarian, canadian bacon)

    Grab a slice of cheese

    Put them together and viola! you have a tasty bkfst sandwich

    I make a bunch for DH and I and freeze them. I take them out the night before and reheat for 30-40 secs.

    I usually add a banana to it so it keeps me full until lunch.

    cottage cheese doubles .. mix the fruit w/ the cottage cheese ... yummy !

    diy breakfast sandwiches -assemble a bunch on a saturday and zap in the micro either at home or work and you're good to go

  • Greek yogurt, berries, granola or flax, or other high fiber cereal (kashi is tasty )I have a nifty Tupperware that has an insert to keep the top seperate from the bottom so the crunchy stuff remains crunchy ( or can be used for out meal and topping, or milk and regular cereal) takes 5 mins to put yogurt and fruit in it and go ! 

     

    Also I pre make smitten kitchen's apple muffins ( a fairly healthy recipe) and freeze a bunch and grab one and maybe a piece of fruit, or hard boiled egg for protein. 

     

    Pre make oatmeal ( can freeze in baggies)

     

    Hard boiled eggs and fruit

    Where'd you get that tupperware? I'd love to get a couple of those. And I'll have to investigate the apple muffins.

  • I'm taking notes, too. I'm tired of having oatmeal every morning and since I'll be working again soon, I need some ideas. Sometimes if I'm in a big hurry I'll just make myself PB on whole wheat bread.
  • Peanut butter on an English muffin. Whole wheat English muffin would be even healthier.

    Great post!  Like Passanie, I do peanut butter or almond butter on whole wheat toast with a sprinkle of toasted sesame seed or flax seed on top.  It doesn't keep me full that long, but it's my rush rush to-go meal.

    Or a smoothie with greek yogurt for protein.  I toss in a fresh fruit at the bottom of the blender, some frozen fruit, plus some greek yogurt.  If I don't have enough fresh fruit, I might have to add some milk (or almond milk or coconut milk) to get it the right consistency.  You could probably add cottage cheese instead of or in addition to the greek yogurt -- I think that has even more protein.

    Pretty much no matter what I eat for breakfast (unless it's like a full breakfast), I get hungry before lunch.  So I'll usually have my breakfast on my way to work (or before I leave if I have time).  And then at about mid morning, I'll have my coffee/latte/cappucino or whatever coffee drink I made for myself that morning.  It usually stays hot enough in my coffee travel cup.  That gets me to lunch at noon.
