Hi all,
I have a couple in my building that we're getting to know. They've invited us to dinner at their place and we're looking for a night to host a dinner/game night at ours. I dont' know them too well yet, but I know the wife has been in the hospital for stomach issues and is very limited with what she can handle. When we were at their apartment, the husband ate the main course with me and DH, she just ate something cold and a little bit of the salad, they were totally fine.
I don't want to pry into her situation, but I don't want to make something she can't have. They're too polite to say what I can make, she says not to worry about it. anyone have any suggestions with "light" food? I'm thinking a "build your own salad" , and then a chicken course, any suggestions with what I can do? She probably won't eat a lot, but I want to have options available.

If you know she's been in the hospital for her issues, then asking what she can have is not at all prying, it's being superfriendly and accommodating! Just call them up and ask what she likes to eat -- or suggest that you potluck the events. As a mom with a highly allergic child, I know I am nervous going to even the best-intentioned house, since inadvertent cross-contamination is always a risk in a kitchen that doesn't normally practice allergy-safe protocols. I'm happiest bringing food I *know* is safe for my daughter and you may find that your neighbor is as well.
That said, my favorite gluten-free dish is Vietnamese Spring Rolls.
