Recipe rave: Peruvian chicken with aji verde
I got this from Skinny Taste and MAN was it good! And simple to make! You do have to plan from the night before because it really needs to marinate overnight (I probably had it marinating about 26 hours) but its so woth it. And the aji verde! Take the 5 minutes to make it,it totally makes it. We. Wound up splitting a whole fresh chicken and then grilling it - bone side down for about 40 minutes and then breast down for maybe 5. Served with Brussels sprouts, it was filling, healthy, and carb-free.

How incredibly perfect since I just bought a chicken last week!
I made this tonight http://www.successrice.com/en-us/recipes/3467/CreamyPestoChickenandRice.aspx . I only used 1/2 the cream cheese & I used half & half instead of heavy cream. I also used canned peas (cause I didn't have frozen) & added in some leftover broccoli we had. It was delicious. I would add a little more chicken stock next time though but I'll defiantly make it again.
