PSA about gingergrls mac n cheese

Made it tonight with horseradish cheddar. Didn't know you could improve on perfection, but OMG!

  •            Baked Macaroni and Cheese (gingergrl)

    2 Tbs Corn Starch

    1 tsp. Salt

    1/4 tsp. Pepper

    2 1/2 cups Milk

    2 Tbs. Butter

    3 cups shredded Cheddar

    1 lb. Elbow Macaroni, cooked al dente

    Plain bread crumbs

    In medium Saucepan combine first three ingredients , then stir in milk. add butter, stirring constantly over medium-high heat until sauce thickens. Don't stop stirring or it will scorch! Remove from heat.

    Stir in 2 1/2 cups of cheese until melted. Add macaroni- pour into a 2 qt. casserole dish. Sprinkle with remaining cheese and breadcrumbs.

    Bake uncovered at 375 degrees for 25 minutes or until browned and bubbly. Makes 4 servings.

    (I usually have to triple or quadruple this recipe- it works out fine but DON'T triple the Salt- it will be way too salty.)
