I have a lemon tree so I'm always looking for recipes to use up our lemons too. Here are a few I've bookmarked in the past few months in case you're looking for more ideas:

  • Ok, here are a few. I only have a link for the first one, the others are from cookbooks.

    Lemon gnocchi with spinach and peas

    Pear pie with honey (This is sooo good! I picked up the recipe in Greece. I make it at Thanksgiving.)

    2 large pears

    1tsp cinnamon

    1/2 cup honey

    1tbsp flour

    To top:

    1 cup flour

    1tsp baking powder

    1 shot of baking soda (not sure what this means so I use like 1/4 tsp)

    1 egg

    1/2 cup lemon juice

    1tbsp butter

    3tbsp olive oil

    1. Peel and cut the pears in medium-size slices. Grease the bottom of a non-stick baking tin with melted butter. Dust the tin with flour and layer in the pear slices. Dust the slices with cinnamon and pour the honey over.
    2. In a large bowl, mix the flour with the baking powder. Dissolve the soda in the lemon juice, add the whisked egg, honey, olive oil and the rest of the butter. Transfer the liquid mixture to the flour mixture and combine to unify.
    3. Pour this mixture over the pears. Shake the baking tin and bake in a preheated oven at 350* for 40-45 minutes. When done, let the pie rest for 10 minutes. Turn the pie over and serve it warm.

    Lemon Bars

    1/3 cup butter

    1/4 cup granulated sugar

    1 cup flour

    2 eggs

    3/4 cup granulated sugar

    2 tsp finely shredded lemon peel (I use at least double this)

    3 tablespoons lemon juice

    1/4 tsp baking powder

    powdered sugar 

    1. Cream butter, add 1/4 cup sugar and combine. Beat in 1 cup flour till crumbly. Press mixture into the bottom of an ungreased 8x8x2" baking pan. Bake in 350* oven for 15-18 minutes or until just golden.
    2. For filling, combine eggs, 3/4 cup sugar, 2 tbsp flour, lemon peel, lemon juice and baking powder. Beat 2 minutes or until combined.
    3. Pour filling over baked layer. Bake 20 minutes more or until lightly browned around edges and center is set. Cool on a wire rack. If desired, dust with powdered sugar.

    I usually double the filling since it's a little too thin as is. I like my lemon bars to be mostly filling.

    You're vegetarian, right? I have an awesome Greek chicken recipe from my grandma that I'm happy to post if you have any use for it.

  • That's funny, I used to make that gnocchi all the time a few years ago.

    I've decided I can't make lemon bars with my Meyer lemons  :(  I like my bars really really tart and the Meyer lemons are just too sweet. It never turns out the way I like.

    That is funny. I wonder if I got it from you originally?

    I hear you on the tart lemon bars, but what I wouldn't give for a Meyer lemon tree! One of each would be perfect.

    Here's another one, I think the sweetness of Meyers would work really well with this:
