What are you cooking for dinner this week?

Anybody have meal ideas/menus planned already for the week? I'm planning mine and feeling uninspired.

Re: What are you cooking for dinner this week?

  • I am there with you.

I ask DH what he wants and he always says, lasagna or enchiladas. Really???

  • Sole w/ asparagus and roasted potatoes is tonight.

Dont ask about the rest of the week since I have not gotten that far.  Last week I was on fire...I made Irish Beef Stew w/ Soda bread, Chili w/ cornbread, ranch burgers with cranberry salad, and blackbean soup w/ pepper salad.

I am feeling less inspired this week.

  • Yeah, DH either does not give me any ideas, or says things he know I will not make or are only special occasion foods.

    So far, I've got this:

    Monday: Shakshuka

Tuesday: Potato leek soup, grilled cheese and steamed broccoli

Wednesday: Lemony lentil salad with grilled fish

Thursday: Spicy veggie burgers and baked sweet potato fries

  • Tonight is broiled balsamic chicken and southwestern quinoa salad

Tomorrow DH is grilling beef-n-mushroom kabobs

Wed is oven-"fried" pork chops, toasted quinoa (made with leftovers from tonight - ha!), and sauteed broccoli with almonds.

Thursday we're having salmon burgers and sweet potato fries

    Friday is DH's work banquet

Saturday is mustard-crusted beef tenderloin with sauteed spinach and mushrooms

Sunday is oatmeal and yogurt (we try to eat light on Sunday night, for no particular reason)

Edited to correct mix-up in menu planning due to event on Friday night.

  • Bok choy and leek risotto tonight.

    Crockpot minestrone

There's a quinoa pilaf I want to try, possibly with asparagus on the side.

We've got hot crash potatoes to make at some point.

My favorite place on earth: The Amargosa Valley.

  • Sunday was chicken fried steak, asparagus, and mashed sweet potatoes.

    Monday was baked potato soup.

Tonight- I was going to do crockpot sloppy joes for E and for leftoevers for him for this week and I'm going to dinner with my Dad and his new GF however E is really sick and won't be going to class tonight and has no desire to eat anything and I don't think it would be fair to torture him with the crockpot going all day. So tonight nothing.

    Wednesday- Leftovers

Thursday- E was suppose to cook but I think I'll just do sloppy joes then.

Friday- E has class and I'm on my own.

  • Ok, so I was able to muster up a menu this week:

Last night was lasagna (we did not have it in a long time) with homemade garlic bread and spinach salad

Tonight-chicken sausages and shells n cheese

    Wed-vegetarian chili

    Thurs-leftovers

    Friday-not sure

This upcoming weekend we are making lots of food in preparation for the Niner playoff game!!! Yes, it is that exciting in our house. #49erfaithfulforlife
