I'm so uninspired.  We're trying to eat healthy, but John won't eat most meat (trying to be very low cholesterol.).

    Last night I did meatloaf and mac and cheese, but subbed cauliflower for the pasta, it was pretty good. Monday night I did skirt steak and sauteed fresh scallops. I did grilled swordfish and sauteed scallops on Sunday. Tomorrow I'm doing chicken enchilada soup (Skinny Taste).

  • i can give you some veggie options if you'd like with faux meat or stuff with beans if your looking for protein. or tofu (but tofu is an acquired taste)

    we are doing grilled cheese and soup as long as ken plays basketball if he doesn't i will make a quiche 

  • Marie, I'd love a bean based recipe.  I make Black Beans and rice from Mel's Kitchen Cafe often.  When I have time I make Eating Well's Bean Bolognese.

    Country style ribs w/sauerkraut in the crock pot

    Cheesy potato soup in the crock pot 

    macaroni with sauce (including meatballs, sausage, and braciole) and garlic bread

  • quick and easy tilapia vera cruz - tomato, onion, bell pepper, green olives, garlic - slice everything up and put in casarole, place fish on top, cover with foil, bake in oven until fish is opaque...

    I know, not that healthy! lol But we usually have healthy breakfast, lunch and snacks - so I don't kill myself if we have heartier dinners here and there. Although this week it just seems to be hearty all week!

    Will YH eat fish? We like to do fish (salmon/trout/tilapia/mahi mahi) with baked sweat potato wedges and a green vegetable. We grill the fish whenever we can, otherwise I bake it in the oven. I usually just sprinkle with dill or lemon garlic, and bake it in a glass pan.

  • Not really inspiring, but I put some boneless skinless chicken thighs in the crockpot with BBQ sauce. Will make string beans and a salad.

  • We have a bunch of leftovers, so we're going to eat a little bit of everything.  Leftover bolognese and spaghetti, italian wedding soup, and ceasar salad.
