Obviously you don't need all of them, use what you like and have on hand. The roasting is the best part.
i agree roast them up and toss with olive oil garlic and parm cheese. YUM
or if you have ingredients to do an alfredo sauce you can do that.

Ding ding ding - this was the winner. I had peppers, onions, corn, and grape tomatoes I was able to use.
It was. And for a little extra flavor I added about a tablespoon of bruschetta italian dressing.
