I've tried the black bean recipe on allrecipes, but that's about it. Any suggestions would be appreciated. Thanks!

I usually make it as directed and when it cools, add bell peppers, tomatoes, goat cheese, lemon juice, salt and pepper, and let it sit for a little while. It works as a side/salad and it's delicious!

I'll use it plain as a base for spicy shrimp or curries, or I'll use it as a side with dried fruits - just add raisins or what ever to the pan - as the quinoa boils and then simmers and absorbs, the fruit plumps. It's really good (ou can also do this with couscous).

I make a cold salad with cut up canned beets, sunflower seeds & sesame oil.

1 cup of raw quinoa and cook

1 plum tomato, diced

sliced onion

sliced bell pepper

sliced kalamata olives

diced cucumber

feta cheese

1 small clove garlic, minced

lemon juice, balsamic vinegar, olive oil, oregano, salt and pepper for dressing

I cook as directed and cool.  Then I add grilled (or roasted) zucchini, halved cherry tomatoes and cubed fresh mozzarella.  I add just a little olive oil, salt and lemon juice.
