I saw in your blog one of your "12 in 2012" is stuffed game hens. In my head, I always thought they were fancy and would take too much work and be complicated. I'm here to say, they are so easy! I do them for our Christmas dinner, since it is just the two of us. Under $10 for 2 hens, bake for an hour, and ta-da. I usually stuff mine with onions and apples (and I don't personally eat the suffing), and baste every 15 minutes with melted butter and soy sauce. Yum! I'm more daunted by a full turkey!
