Any good recipes to 'hide' vegetables from kids?

My 3 year old is a picky eater so I want to make things that have vegetables - but so she wont know it.  Anyone have any good websites or ideas?  Thanks!

  • My kids are super picky so I try to sneak in veggies in stuff that they will actually eat.  Spaghetti and meatballs is almost a sure thing here.  So I pur?e a few different veggies and mix them into the sauce and meatballs,  I also buy Ronzoni pasta that it tri colored.  I can't remember the name but it's in a green box and has a serving of veggies for every 4 oz.  I also replaced French fries with sweet potato fries.  They also won't touch brown rice on its own but will eat in soup.  I also don't make it a habit to buy junk.  I have, however, been buying Whonu cookies.  They are loaded with vitamins and my kids love them.  But they only get them if they eat a decent amount of food.
  • Jessica Seinfield has a book - Deceptively Delicious that has lots of recipes for hiding veggies.  Some of the recipes are a bit elaborate for me (more than a few ingredients) so i do my own version.

    This is what I've tried so far:

    1.  cauliflower in scrambled eggs.  puree the cauliflower (you must steam it first).  i put about 1 ice cube size worth for 1 egg (or about 1/2 cup for 4-5 eggs).  (I do the puree and then measure out 1/2 cup and put in ziploc in freezer for future use).    when you are scrambling the egg is when you add the cauliflower - before pouring into the frying pan.  they are actually really good and DD loves them.

    2.  pureed spinach in english muffin pizzas.  put the pureed spinach on the eng. muffin before putting the tomato sauce & cheese.  DS really likes these.

    3.  banana bread w/cauliflower.  this is really good too.  i don't have the recipe on hand, but both my kids really like it.  it is fairly healthy so i give it to them for breakfast too.  (They are the worst eaters!)

    4.  avocado puree in choco pudding.  i tried my own version of this and it was terrible!!  i had to throw it out.  i can't vouch for how it tastes if you actually follow the recipe

    5.  sweet potato puree inside a grilled cheese (as long as you use yellow cheese, it is hidden).  i did this once and DS couldn't tell the difference.

     I'm guessing cauliflower isn't as nutritious as other veggies, but i figure it is better than nothing (& one of the easiest to hide)!!

  • I put sweet potato carrot puree into lots of things, the best ones have been

    -french toast batter with a little vanilla and cinnamon, my daughter loves it.

    -grilled cheese

    -marinara sauce

    -egg mixture for breading chicken

  • This is a recipe my mom used to make when I was a kid so I LOVE this. I've since added chopped carrots and a box a spinach to it and my son doesn't even notice.

    Zucchini Pie

    Ingredients

    • 3 cups zucchini, diced
    • 1 onion, chopped
    • 4 eggs, beaten
    • 1 cup buttermilk baking mix
    • 1/2 cup vegetable oil
    • 1/2 cup grated Parmesan cheese
    • 1/2 teaspoon dried marjoram
    • 1 teaspoon chopped fresh parsley
    • ground black pepper to taste

    Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10x6 inch pan or a 12 inch pie plate.
    2. In a medium mixing bowl, combine zucchini, onion, eggs, buttermilk baking mix, vegetable oil, Parmesan cheese, marjoram, parsley and pepper; mix well. Spread into the prepared baking dish.
    3. Bake for 30 minutes, or until lightly brown.
