I know I have seen several of you on here talking about recipes from skinny taste and ones for weight watchers. I've looked at the skinny taste website and I'm confused because most still seem to me like they are high in calorie and fat. I'm looking for some filling light recipes. DH is renting me to cook healthier but everything I've tried so far he is starving again in an hour. I'd love any recipes you all have!!

I agree with this. I love cooking light.
Also, what do you consider a low calorie meal? Most people have a diet of around 1,500-2,000 calories a day, so by the end of the day you should have a decent amount left for a full healthy dinner. You need that fuel
I'm a big fan of rice and beans as a meal, and also seasoned seared fish or pork chops with a steamed or sauteed veggie side. Stir fries are a good option, especially because you can get by with using a fairly small amount of oil for a large portion of food. We also buy whole beef tenderloins and cut them into steaks to grill or sear stovetop.
Also, the Gourmet Day to Day blog has featured a lot of great lower-calorie dishes lately. (Just scroll down past the cookies. :-) )
Some of the lighter entrees we like are
Scallion & Garlic Shrimp
Shrimp Linguine (substitute whole wheat pasta)Mongolian Beef
Black Bean Soup (I use lean ground beef or ground sirloin)
Crunchy Honey Chicken
Red Chile Chicken w/ rice & black beans
Pasta e Fagioli (You can lower the fat count by substituting cubed prosciutto for the pancetta or can omit, although the ratio of meat to soup is so low that I wouldn't worry about it.)
