Since I am by a computer now...what's on the menu for the week?

It is crazy snowing here, so that should be good for skiing tomorrow.  The drive from Denver to here was ROUGH last night.  I am glad we are driving back in daylight hours.

S ? out in Vail

M ? out in Vail

T ? airplane food or grabbing something on the drive home

W ? bacon and cheese chicken sandwiches, wheat brioche rolls, zucchini fries

T ? shredded beef tacos, black beans, guacamole

 F ? barbecue beer chicken thighs, mashed potatoes, sugar snap peas

S ? honey pork kebabs, brown rice, spicy cucumber salad

  • Sunday - chicken tandori salad, yogurt dressing 

    Monday - chicken tikka masala, samosa potatoes 

    Tuesday - Tom Ka Gai (thai coconut chicken soup), laab (thai spicy meat salad)

    Wednesday - cayenne coconut chicken fingers & spicy coleslaw

    Thursday - steak fingers, jalapeno cream gravy, cauliflower mash & peas

    Friday - salmon with spicy mango salsa (on mixed greens)

    Saturday -  out 

    I love to cook and now that I finally (after 3 weeks) have everything unpacked I have time to cook more interesting foods.  My new years resolution was to try at least 4 new recipes a week since I have so many recipes I want to try. 

    New this week: steak fingers, mayonnaise, cayenne coconut chicken fingers, spicy coleslaw,

    recipe please!

    I modify a recipe from Make it Fast, Cook it Slow (a must have slow cooker book if you don't already have it) by putting in the same additions each time. However I don't measure. I'll measure this time and then pass the updated recipe along! 

     How is Vail treating you? Any good meals? 

  • I don't plan the week because I rarely have time to cook or DH and DS are at wrestling practice.  But, I love to make a nice dinner or something fun on Sundays.  Tonight, Pork a la Romana (roast pork loin stuffed/basted with rosemary/garlic/prosciutto butter from The New Basics Cook Book) and roasted new/sweet potatoes with rosemary, garlic & thyme, and asparagus with olive oil and lemon.
  • S - leftovers from dinner last night

    M - turkey chili

    T - chicken Jalfrezi and Naan

    W -   beef curry 

    Th -  crockpot chicken tacos

    F -  fish (tilapia I think), rice and veggies

    S -  steak & potatos

  • S- Crock Pot Santa Fe Chicken, Rice

    M- chicken enchilada soup

    T- Stacked Roasted Vegetable Enchiladas

    W- Grilled Chicken Salad with Chipotle-Lime Vinaigrette

    Th- zucchini stuffed chicken, salad

    F- buffalo chicken bites, loaded baked potato salad

    We ate at Beaver Creek today...don't even remember the name, but it was good!  I actually liked the cookies they served on the slopes the best =)

  • We had leftover pork chops & sweet potato fries tonight. Mon: leftover roasted tomato soup and grilled cheese sandwiches. Tue: Black Bean Salsa Chili. Wed: leftovers. Thursday: fajitas. Friday: leftover fajitas and margaritas.
  • The only two things so far are cream cheese chicken and Mexican cornbread casserole

    M: Roast chicken, with cauliflower puree, roasted yellow squash.

    T: Spaghetti squash w/ turkey meatballs, steamed breen beans.

    W: Smoked pork loin, sauted cabbage, some other veggie.

    Th: Grilled chicken breast, some type of veggies.

    F: Girls Night Out.

    S: Party at Dad's.

    basically you make the cornbread like normal. I add in a big handful of frozen corn, green chilies(or jalapenos), and cheddar cheese. 

    Make your taco meat like normal.

    Put half of corn bread mixture in dish, put taco meat mixture, cheese, and then  put other half of corn bread mixture.

    I typically have to bake a little longer than the cornbread recipe calls for.

    DH likes it with salsa on the side.
