What am I doing wrong?? re: Baking

Lately whenever I bake cookies they ALWAYS turn out flat and burnt.  I follow the recipe to a "T" so I feel like I'm not doing anything wrong.  (Of course, I very easily could be, as baking is NOT my strong suit)... is it the WAY I'm mixing things?  I just have a basic handheld mixer.  I'd like to blame it on my oven but when I cook dinner, I don't seem to have a problem.

  • You might be over-mixing. I only use the mixer for creaming the butter and sugar, everything else I do by hand.

  • Try chilling the dough first.

    I find that bread flour, rather than AP flour, gives me chewier cookies. I also check on the cookies and rotate the pans every few minutes ... plus I find that the recommended baking times are a couple minutes too long for me. Some ovens cook differently than others.

    That's what I thought too so yesterday when I baked, I made sure to use a brand new box of baking powder.. everything else was pretty new too.  

    It's very possible that I over-mixed, or maybe didn't use enough flour.. I'm going to give baking one more try and then I'm going to stick to cooking  :)

    This confuses me. Why not? I use my stand mixer for everything I bake and never have any problems.

  • Also, not sure if you already do but I always use parchment paper to bake my cookies and they come out just right every time. 
  • i have never had an issue with flat cookies using a mixer.  over mixing yields tough cookies, not flat ones.

    most likely your oven temperature is off.  when you go to the food store next time go to the baking aisle and get an oven thermometer.

    Thanks.... I found it on Pinterest. I thought it was cool because I can cook .....but baking is not my strong suit.

  • I use a trick Lauren told me about once.  She said to roll the dough into little balls, break them in half and put the opposite edges together....I have no idea how she explained it to make more sense, but I haven't had a problem with flat cookies since.

  • Any chance your pans are older and "permanently" greased?  I frequenlty used my baking sheets to roast veggies, etc and when I bought new ones just for cookies my problems stopped.  The cookies, no matter how cold the butter or dough, would spread out into a thin buttery waffer with the old pans.
