Also, what is chicken fricasee. I googled but the images don't all look the same at all.

  • Sorry its taken me so long to respond!  Ryan is sick :-( so I didn't log on at all yesterday.

    Chicken Fricasee (at least my family's recipe of it) is basically just boiled chicken breast, but it is surprisingly tasty - not bland like regular old boiled chicken.  You start by browing the chicken breasts (I use 1-2 tbsp of butter for two chicken breasts - depending on how big your pan is).  Then add 2 cups of water (I think, it just nearly covers the chicken breasts) + 1 chicken bouillion cube, 4 whole allspice, and a (dry) bay leaf.  Simmer 45min.  Remove the chicken & spices.  Combine 2tbsp flour + 1/4 cup milk & add to the cooking water.  Simmer/Boil down to a consistency that you're happy with, then pour over the chicken & rice as a side.

    Red beans & rice -

    Dice a couple sticks of celery, a green pepper, and an onion.  Crush a garlic clove.  Sautee the veggies until soft ( a few minutes).  Add one can tomato sauce, two cans red beans (drained, but not rinsed), 1 tsp worchestershire, 1/4 tsp tabasco (or other hot sauce), 1/4 tsp cayenne powder, and 1 package smoked sausage (I used eckrich skinless so that I don't have to peel & cut each link long ways before slicing so they are little half moons).  Simmer 15-20 minutes.  Serve over rice.

    This is a little spicy, so if you're not sure if your kids would like it, maybe back off on the tabasco or cayenne the first time you try it.
