High-elevation cake recipe

All of my attempts to bake a from-scratch cake in Denver have failed miserably. I've adjusted the flour, adjusted the fat/liquid and still no good. I think I need to start out with a recipe that is intended for high altitude so it doesn't need adjusting. Does anyone have a go-to recipe they use that even I won't screw up? I'd like to do a cake for dD's birthday, and I plan on doing (several?) trial runs in the next month or so.

  • I have had the best luck with box mixes.  I have also used the cookbook Pie in the Sky but the recipes are a little more fancy than a typical birthday cake.
  • I love all the cookbooks by the Denver Junior League.  The baked goods are all adjusted for a mile high.  The older ones, Colorado Cache and Creme de Colorado, seem to have more cakes and cookies.  The local libraries have them, and if you like them you can find them on Amazon or at thrift stores. 
  • I have Pie in the Sky and one of the Colorado Cache cookbooks. I think Pie in the Sky actually has good basic recipes that can be easily adapted. It is all baked goods.

    Also this may sounds obvious but make sure you use an oven thermometer to check if your oven is actually set at the temperature it says.

  • For a basic chocolate cake, the Hershey's chocolate cake recipe works well. I just increase the flour a little and decrease the leaving a little. Works great!
