how to cook eggplant?

I have 4 eggplants I need to use. I have never cooked with them before and only eaten eggplant a few times, years ago. I have no idea what to do with them.

  • Eggplant Parmesan is good.  I don't have the recipe I use with me at work, but I think it's a Martha Stewart one.

    You could also cut it up and saute it in some olive oil with some salt & pepper and serve with pasta.

  • I am a big eggplant fan, and I would also vote for Eggplan Parm if you like Italian food. I like the Cook's Illustrated recipe. Salting eggplant is done to remove bitterness, but I have always skipped that step with no issues. You can also toss it into stir fries or pasta sauce like any other veggie. The one thing to watch for with eggplant is it can absorb a lot of oil if you saute it, sort of like mushrooms.
  • I'm making eggplant parm for dinner tomorrow!  The plan is to slice 1/4 -1/2 inch pieces, salt and blot with papertowel, dip in beaten egg then breadcrumbs then bake on cookie sheet till cooked through.  Then top with tomato sauce and mozz cheese : )  Easy peasy!
  • My favorite way is salt it to make it less bitter, then rinse, and dry on a paper towel, and mix in a bowl with a little garlic, olive oil and some herbs (Italian flavors work well- basil, oregano, black pepper, etc), then put it on a rimmed baking sheet and bake at 300 or 350 until the eggplant is softened.  You might want to put down a layer of parchment paper or grease the pan a little to make it easier  to get out of the pan.
  • I use it a lot in ratatouille.
