I'm going to visit my cousin & the new baby on Sunday. I want to bring them a meal. Anyone have suggestions for a simple meal to make, that will travel & freeze well?

You could stuff chicken breasts and freeze them, and bring a bag of frozen veggies and a container of those premade mashed potatoes. That should be fairly healthy and easy to thaw/bake.
I make cheeseburger casserole. Penne pasta, 1 can of Campbell's nacho cheese fiesta soup, ground beef (cooked first), 1 can of crushed tomato or diced tomato, shredded cheese
You just cook the pasta and ground beef, then you pour all of that into a casserole dish except the shredded cheese, which you sprinkle on top. You bake at 350 for a few minutes, just until the cheese on top is melted. Sometimes I will also top with crushed tostitos and some dallops of sour cream to make it more like a mexican casserole. It freezes and reheats well if you don't do the chips and sour cream.
How much ground beef do you use, Shawna? That sounds good!
