Girls, I need your help. I am siting here making up my weekend menu and since we are going on a date Saturday night I want to make H a nice Sunday dinner. I want to make a meatloaf and mashed potatoes but I've really never made it from scratch. I usually just use the box mix stuff from the grocery store but I want to make it from scratch. Does anyone have a good recipe? Thanks!

My go to recipe is from Paula Deen. I have adjusted it a bit by doubling the onion & bell pepper (mix red & green) though. I do 1/2 cup each of diced, and then I throw the other half cup of each into a food processor. That adds a lot of flavor to the meat, but doesn't make it too chunky & fall apart.
Old-Fashioned Meat Loaf
I don't have a recipe per say, but here's what I use
-1 lb meat, 1 pouch onion soup mix, 1 egg, 1 piece of wet bread (or breadcrumbs), and ketchup. I top with ketchup too.
I think there are SO many variations though depending on what you like!

We made it this week! Excellent. I doubled the recipe for left overs and even crumpled it up for lasagna and then quesadillas!
