What is NEI?
If you're looking for chains, most have GF options and you can view most of the menus online.
If you're looking for local, small places, you'll need to speak with your server and be specific about your needs.
where are you looking to go? what towns in NJ? that will help me make some suggestions.
In the city there is one called Risotteria http://risotteria.com/ which my sister (who is GF) adores. There is a place http://www.trevocirestaurant.com/ Tre Vochi in Ridgewood that she likes that also has a nice risotto.
Most places we go she can find a risotto (she double checks w/ the chef) or else a fish or chicken dish that is simply prepped with a veggie or potato side. The Risotteria is really the only place that really caters to it that I can think of. They have amazing bread and all that stuff.

depends on where in nj you're looking - I know of a few places around here, and do eat gluten free when i'm not pregnant!
Palo Pizza is in NY and my Gluten free friend highly recommends it. She said it's the only place that she has never gotten sick. she goes there a lot.
