Chicken Thigh recipes?

I either need to make something with them today or put them in the freezer.  Any ideas?  I was hoping to just throw them in the crock pot.

  • I'm making Slow Cooker Chicken with Corn & Poblanos at some point soon, and I found a recipe for Honey Sesame Chicken that sounds super yummy. And Crock Pot Garlic Brown Sugar Chicken is always good - it's my fall back :). I can probably come up with more if you need them!

     

    Slow Cooker Chicken with Corn & Poblanos 

    1 large white onion, chopped
    6 garlic cloves, finely chopped
    3-4 boneless skinless chicken breasts OR
    6 whole chicken legs (I'm using thighs because it's what we have :))
    1/2 lb. fresh poblano chiles (about 4), stems, seeds, and ribs removed and chiles chopped
    1 (12 oz. bag) frozen corn
    1/2 c. sour cream
    3/4 c. chopped cilantro
    salt and pepper, to taste 

    Directions:

    1.  Place onion and garlic in slow cooker.  Top with chicken and season with 1/2 tsp. salt and 1/2 tsp. pepper.  
    2.  Layer poblanos and corn over chicken and season with 1/2 tsp. salt and 1/4 teaspoon pepper. Cover and cook according to manufacturer's instructions depending on length of cooking time.
    3.  Lift chicken from cooking liquid and shred into large pieces.  Whisk sour cream and 1/2 c. cilantro into cooking liquid.  Return chicken to sauce.  Season with salt and pepper and serve over white or brown rice.  Garnish with remaining cilantro. 

     

    Honey Sesame Chicken

    4 boneless, skinless chicken breasts (thighs would be fine too)
    Salt and pepper
    1 cup honey
    1/2 cup soy sauce
    1/2 cup diced onion
    1/4 cup ketchup
    2 tablespoons vegetable oil (could also use olive oil or canola oil)
    2 cloves garlic, minced
    1/4 teaspoon red pepper flakes (optional - doesn't really add heat, just adds more flavor)
    4 teaspoons cornstarch dissolved in 6 Tablespoons water
    Sesame seeds 

    Directions: 

    - Season both sides of chicken with lightly with salt and pepper, put into crock pot.
    - In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken.
    - Cook on low for 3-4 hours or on high 1 1/2 ? 2 1/2 hours, or just until chicken is cooked through.
    - Remove chicken from crock pot, leave sauce.
    - Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot.
    - Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened.
    - Cut chicken into bite size pieces, then return to pot and toss with sauce before serving.
    - Sprinkle with sesame seeds and serve over rice or noodles.
     

     Crock Pot Brown Sugar Chicken

    1 large chicken, cut into serving pieces (thighs work fine too)1 cup packed brown sugar2/3 cup vinegar1/4 cup Sprite or 1/4 cup 7-Up soda2 -3 tablespoons minced garlic2 tablespoons soy sauce1 teaspoon pepper (regular black or cayenne)

    Directions

    - Place chicken in crock pot.
    - Mix all remaining ingredients and pour over chicken.
    - Cook on low for 3-4 hours (or until done).
    - Serve over rice or noodles.
    - You can thicken the juices after cooking with a little cornstarch.

  • I have thrown A large pack in the crockpot with a can of Dr. Pepper and bbq sauce for sandwiches. You could also put them in there on low with some some water garlic, onion, salt and pepper. Then you can shread them and use them later in tacos, soup, and so on.

  • Are you on pinterest? I have a recipe pinned that I love for chicken thighs in the crockpot. The sauce is BBQ, orange marmalade and soy I think and so good 
  • Thanks for the ideas! I went with the easy peasy BBQ chicken this time :). I really need to spend more time on pinterest...
