Same old, same old - need ideas
I'm in a cooking rut; I've been making the same meals for dinner and I'm getting rather bored with them. There are about 7-8 in the rotation: tacos, fajitas, broiled fish, pasta w/ marinara, pork tenderloin, chicken/rice in the crock pot, shrimp w/ linguine and sauteed spinach in a scampi-like sauce.
What are your staples for dinner?

Chicken with veggies in a garlic cream sauce over pasta
Pesto pasta
Baked chicken breasts with lemon and capers
Palek paneer
Rice and beans with hot sauce
Homemade pizza with whatever vegetables we have at the time
Venison or beef chili
Cottage pie
Chicken noodle soup
I am usually stuck making something quick since we are usually starving when we get home from the gym. Mine are very similar to yours unfortunately.
Tacos, taco salads, chili, baked chicken with veggies, stir fry, lasagna (if I have time), turkey meatloaf, turkey meatballs, panini's, breakfast for dinner.
Us too. We eat a lot of grilled chicken. So much that you'd think we'd get tired of it, but we try out a new marinade every week. We'll add a side or two of veggies and pasta or potatoes.
Baking a whole chicken (then we use the leftovers for things like nachoes, sandwiches, chicken noodle soup, spicy chicken pasta, etc.)
Lemon chicken or herb garlic chicken breasts.
Chicken or shrimp stir fry (we will either use fresh veggies or a frozen bag of steamers and some spices) over rice.
Turkey Sausage/Ground turkey lasagna.
Grilled or broiled talipia.
Foil pack chicken with potatoes.
Pasta Primavera with a light, homemade Alfredo sauce
Bunless turkey burgers with sliced tomato, fresh, sliced avocado drizzled with lime juice served with brown rice
Panko encrusted boneless chicken breast (served with honey)

Pesto chicken topped with sliced tomato and Mozzarella (Tomato and cheese put on with 5 minutes left in cooking time.)
Chicken Tzatziki. Sauteed chicken medallions served on a pita (we actually use something called roll outs) with the tzatziki sauce (near the hummus.) Buy the one that lists yogurt, not sour cream as the first ingredient. With Lettuce and Tomato.

Any tricks for stir frying without drying out the chicken or shrimp? I love stir fries, but I think I may overcook the meat.

I can't help with shrimp, but cut the chicken up into strips or small, thin medallions. They'll cook fast. Also, pat the chicken dry before sauteing. It will help it brown.

Spicy turkey burgers with guacamole on sandwich thins (we could eat these every day)
Pork tenderloin - teriyaki marinade or rubbed with a mixture of garlic, evoo, paprika and oregano or stuffed with spinach, garlic, onion and pecorino (I swear it's easy to butterfly & stuff a tenderloin)
Spicy peanut noodles with chicken & veggies
Shrimp with pasta and cilantro pesto
I do simple stir fry a lot, mostly peppers and onions with teriyaki over rice.
Or pasta with any combo of sauces.
Lots of soups, mostly cream-based chowders or dumplings. mmmm.
As you can tell, I don't really eat meat. And H isn't ever home for supper so I probably eat less fancy than most people.
Italian Sausage is a weekly must (H's fav) - I make it in a white wine sauce with potatoes or in a marinara and serve over pasta. I always add roasted onions & red/green peppers to it.
Pork chops in the crockpot has become a new easy recipe. I just add it to a microwave package of brown rice and some steamer veggie.
Jambalaya (the Zatarain's box) and kielbasa or chicken sausage. I cook the sausage separate in apple juice and then add to the cooked rice mix.
Mexican Soup {2 cans of cream of onion or celery, 1 jar of southwest salsa, pkg of chicken breast} mix in crockpot and cook on low @8hrs. I add corn the last hour. Top with anything you like ~ ex: avocado slices, onions, sour cream, tortilla chips
Coconut chicken & mashed sweet potatoes {dip salted/peppered chicken in egg and coat with sweetened coconut flakes, garlic & onion powder} Bake at 400 about 30-40min. I mixed apricot jam and spicy brown mustard and topped after baked.
Stuffed Chicken Chili Rellenos- Season chicken with cumin & caribbean seasoning, bake covered in little broth to keep moist, until chicken shreds. Mix chicken with cooked corn and mexican cheese. Stuff pablano peppers that are cut in half an cleaned out. Top with little more cheese. Bake at 375 until peppers are soft. Top with salsa verde (green).
Shredded BBQ Chicken Sandwiches - Cook chicken breast in slow cooker with orange pop, apricot or orange jam, cider vinegar, BBQ sauce, diced onions & garlic until chicken shreds. Top hoagie with chicken and monterey jack (or any) cheese

I do not because I'm a total baby about spicy food, but you certainly could! You could also dice jalepenos and add them or use a hot flavored salsa. I usually get the salsa with black beans and corn, but you could always add your own bb if you want them in the soup cant find a hot salsa with them.
