what main dish to go with mac and cheese. And your favorite recipe?

I have a bunch of colby jack, sharp cheddar and gouda in the fridge and I'm craving mac and cheese! But I feel bad making it a main dish...so what should be the main dish that pairs well with it?

And what's your favorite mac and cheese recipe?

Well, if you asked my husband, he would immediately say steak.  I think just about any of your comfort food proteins would work: roast chicken/chicken breast, pork chops, etc.  Or just go for it as the main dish and make a salad to assuage your guilt.  I make my mac and cheese with the barilla plus pasta, use 1% milk + wondra to make the base sauce, and top it with a whole wheat panko topping before popping it in the oven.  I have convinced myself that the other ingredients are healthy and therefore, offset the cheesy decadence.

I love pulled pork sandwiches and mac and cheese. Or BBQ chicken.

I wouldn't feel bad - if you're going to make mac & cheese you might as well make it the star of the meal!   You can always add some diced ham or crumbled chorizo for extra protein. We added chorizo to Alton Brown's baked mac and cheese recipe and loved it - Chorizo Mac & Cheese with Crispy Panko Topping. Served it with a salad and called it a dinner!

I rarely serve anything but a veggie with mac and cheese - to me, it's the star of the show. The few times I've made a main dish and had the mac and cheese as the side, I've done a grilled ham steak.

I like to add either ham or chicken to it and make it a one-dish meal.  Sometimes I put broccoli in it too.

i know it's not fancy but nothing goes with mac an cheese better then meatloaf!
