yummy burritos!

so last night i was trying to come up with a dinner idea and this came to me and it was delicious!!!

this made enough for 4 stuffed burritos so use more ingredients if you want to make more :) and i didn't measure...just guesstimated 

in a big bowl combine half a can of refried beans, half a can of black beans, bit of fresh chopped cilantro, 1/3 cup of cream cheese, dash of cumin, dash of paprika, s&p, a squeeze of lime juice, splash of red wine vinegar, few splashes of franks hot sauce. stir until all combined. i didn't have the cream cheese at room temp or anything but it may have helped to combine it a little better. 

then in a burrito size wrap - i put some shredded cheddar cheese, baby spinach, the bean mixture then wrapped up  and sprinkled a bit more cheese on top and baked in the oven 350* for about 25 min covered in tinfoil and then took it off and also turned off the oven and let the burritos sit in the oven until DH came home a few min later. a tip - spray the pan with PAM first...so they don't stick.

serve with salsa and sour cream! mmmmmm

it'd be good with  green onions on top or hot peppers as well depending...or you could add avocado inside!
