What veggie sides do you eat during the week?
I really need some new ideas. I'm getting sick of roasting or steaming broccoli or heating up some frozen corn/peas/green beans.
Salads aren't really an
option unless they're the main course because I've found we don't
really eat them as a side and I don't want to waste the ingredients.

for living with a vegetarian you'd think we'd at more vegetables on the side
we do salad a lot
mozzerella caprese
cucumbers and tomatoes drizzled with some italian dressing (belles FAVE)
asparagus
asparagus- raosted with parmesan cheese and balsamic
peppers w/ zuchinni & feta - sauteed with evoo, salt pepper garlic
green beans - boiled then sauteed w/ turkey bacon and lots of garlic or in the form of a casserole w/ mushrooms and cream of mushroom
creamed spinach - the frozen kind - not great but easy
Roasted asparagus is a favorite here - I coat it w/olive oil and a little bit of Italian Seasoned Breadcrumbs and roast at 400 for about 12 minutes-ish.
We also have either kale or escarole once a week - sauteed with garlic and oil, S&P. Broccoli rabe, roasted root veggies, cucumber salad (in lieu of a tossed salad), brussel sprouts (I roast them - I know a lot of people roast with bacon or pancetta, but I don't use meat with mine)... I know you said you're tired of corn, but I do sometimes use canned white shoepeg corn and I mince sweet onion and bell pepper and cook it all together. And while technically a fruit, I oven roast slices of plum tomatoes with olive oil, S&P too.
We also do a simple tossed salad every night, so I can't help you there!
Besides the frozen broccoli, peas/carrots, corn....
Sauted spinach with oil & garlic
Roasted asparagus
Baked asparagus with Lemon, butter & garlic salt
Sauted zucchini (or steamed) with oil & garlic
fresh green beans sauted with red pepper & oil
Cucumbers with ranch dressing or in the summer fresh tomatoes with S&P & vinegar
Pasta salad with peppers & tomatoes
Last night Paige had 2 pickles with her burger
sweet potato fries
Rice with mushrooms & peas.
Ohhh what about candied carrots... brown sugar & vinegar??? Its been awhile since i've made them.
In the summer time we char romaine lettuce on the grill... cover it with oil and sea salt... so good!

Summer is SO much easier because of the abundance of fresh produce. In winter I feel like nothing fresh is as good.
Saute Broccoli
Roasted Cauliflower (sometimes plain sometimes sprinkled w/ breadcrumbs and/or parm cheese)
Saute of carrots and snap peas (frozen)
string beans cooked and either hot or cold w/ olive oil and balsamic or red wine vinager
Grilled asparagus (sometimes w/ parm cheese on top)
I'll grill any veggie I can in the summer
Steamed broccoli w/ lemon and olive oil
Fresh string beans sauteed w/ butter & almonds
oven roasted asparagus w/ lemon & thyme
brussel sprouts - pioneer woman recipe
corn on the cob (the ones in the steam fresh bag)
edamame - kids LOVE popping them out of the pod
steamed carrots or sauteed with a little brown sugar
