What should I make with this?

We're having a couple people over for dinner tonight and I'm making

this Balsamic-Garlic Pork Roast

I want to make another side because I found out one of my guests will not eat cauliflower. My first thought was mashed potatoes but I feel like the plate will be too white, if that makes any sense?

Any suggestions?

  • What about a mix of roasted red potatoes, sweet potatoes, and turnips? You could do sauteed spinach with oil, garlic, and lemon. I also like sauteed green beans with mushrooms in a wine sauce.

  • What about baked apples? I love apples with pork.

    I think you need a green veg, too, though. Could you do apples and green beans or asparagus? If you're just roasting it all in the oven, it shouldn't be too hard.

  • a) I make that pork all the time, freaking yum.

    b) I usually make green beans or asparagus with it- the pork is kind of tangyish and I like the balance.
