i have a package of apple chicken sausage, a box of pasta, a bag of baby spinach and fresh garlic and would love to put it all together for dinner.
how do i make a sauce for this? i don't want red pasta sauce - i also have some sherry and marsala, but not a regular drinkable white wine at home.

would you use sherry in place of the white wine or try to pick up a bottle on the way home?
I personally would use white wine...sherry is sweeter, but would work out okay if you don't mind that.

it'll be wilted! i'll probably toss it into the pan with the sausage to cook together
I think I would roast the garlic bulbs whole and then toss the whole combination with a little olive oil. If you don't feel like getting the white wine.
