Poaching chicken?

So what, injust boil some water and put the chicken in? How long do I do it for? This is for the buffalo dip, I imagine it tastes pretty plain, right?

Re: Poaching chicken?

  • You cant boil the water or it will get rubbery, just a really low, slow simmer and plop the chicken in until its no longer pink.

I like throwing them in the crockpot on low and covering them with chicken stock, then I know they come out perfect and juicy

  • When I boil it instead of baking or another method, I use chicken broth.
  • For the buffalo dip I boil thin sliced breasts. Then shred them. They're going in the dip w everything else I really don't think it makes a difference how the chicken tastes!
  • Just simmer the water or stock. I add peppercorns and cut up celery and onion if I have them.

But then I discovered baking bone-in, skin-on breasts and now I don't poach. The meat is SO tender when you bake instead of poach.
