halibut recommendations?

Okay, Nesties - I bought some halibut today on my way home from the gym for tonight's dinner / my weekly serving of fish.

Any thoughts on how to cook it?  I usually do a parmesan / breadcrumb topping but DH doesn't seem to be a big fan of the breaded topping so I'm thinking just some herbs / spices and maybe white wine or olive oil?  Would love recommendations if you have anything that is good.  :)

  • I like to steam mine, then just add a little lemon juice and evoo.

  • Salt it. Panfry it up in some butter and olive oil.

    Drizzle some of amazing jalapeno vinaigrette on top.

    (I got the recipe from the Pantry at Delancey)

    1 medium jalapeno (use more if the jalapeno is not spicy), finely minced

    3 cloves of garlic, minced and sprinkled with salt

    a handful of cilantro, chopped

    juice from half a lime

    olive oil

    salt

    mix the jalapeno, garlic, cilantro, and lime juice together. you can let it sit longer to get some of the heat ouf of the jalapenos if you prefer.

    drizzle in olive oil while you whisk to emulsify the vinaigrette.

    (this goes amazing over roasted cauliflower)

    This jalapeno vinaigrette sounds AMAZING!  Yum.  I will probably be adding that to... everything (I love spicy foods).

  • I usually sprinkle the top with a little lemon pepper and seafood magic, brush with olive oil and bake it.

  • I'm not sure how well it works on halibut but I've been having a basil pesto over tilapia and baked it. It is super yummy.
  • Beer battered halibut nuggets :)

    But my simple go to recipe is to lay it on foil,  pat it dry, brush with olive oil and sprinkle both sides with salt, pepper and thyme, then layer it on lemon slices and top with lemon slices and bake in the over in the foil.

  • i know i'm way late on this, but i usually slice up a few lemons, and put it on top then bake it with some black pepper.
