Wasn't there just a post about The Riviera Maya, if so I apologize.
I just found out that I am going in April. I am so looking forward to it, it has been such a rough year and can use a break.
I am looking for restaurant recs as well as fun and exciting activities to do. I will for sure be going scuba diving (I love it!!!!)!

We did Xel-Ha for a day but would have been fine with it only being a half day. We also did a snorkeling with turtles excursion that was awesome - we swam with a bunch of sea turtles and rays, then did a tour of a cenote that was super cool. We just booked it through the hotel, so I'm sure every hotel tour desk has a similar options.
Chichen Itza was cool and worth seeing if you've never been. Swimming with dolphins is always fun and also worth doing if you've never done it, but be sure you do one that you actually get to interact. We haven't ziplined in Mexico, but we have in Costa Rica, and it is so, so fun. I'm sure it would be just as fun there!
Honestly, the tour desk at our hotel had a ton of great options. Some of them were a little more expensive then booking separately, but for us it was worth the extra money to know we were being picked up for sure and everything was taken care of. Have fun!

We also went over to Cozumel one day and rented scooters which was a ton of fun.
A few years ago we ate at this restaurant for Valentines Day. http://www.hotellatortuga.com/el-bistro-restaurant. Ask for a table int heir outside garden area, it was really good and romantic.
