What to make with a bunch of limes?
I needed one lime for guacamole yesterday. I had to go to WalMart to get both me and N a new pair of gloves before going sledding and decided to just consolidate the trip with grocery shopping while I was there. All they had was a 5 pound bag of limes. I was too lazy to go to KS just for a lime so I just bought it.
OK, I used my one guac lime. Now what do I do with the rest, other than throw a party and serve lots and lots of Corona? If it was summer I'd make homemade limeade but I can't think about that with this much snow on the ground. Ideas and recipes?

No more baby siggie pics. Boo.
Schoolsout had a recipe for limeade where you put the entire lime (rind included) in the blender w/ sugar & water and enjoy.
This. Or make lime bars (like lemon bars) or lime pie.

Make mojito marinated chicken.
1/3 cup mint, chopped
1 1/2 tsp lime zest
1/4 cup lime juice
2 tsp olive oil
1/4 tsp salt
1/4 tsp pepper2 garlic cloves, mined
Marinate chicken (i like to use thighs) for a few hours and grill up, so yummy!

This sounds AWESOME!! I need to pick up some mint, but otherwise, I know what we're having for dinner tomorrow night!
Glad you like it, it's yummy for sure!
I decided to do it tonight instead! It's marinating right now. This would probably be awesome on salmon too. Thanks again!
I have never had it on salmon, but it's good on white fish, dover sole (etc). Only problem is do not marinate for too long with fish, the citrus marinade can start cooking the fish, so only an hour!
Salmon is the only flaky fish I'll eat. I just don't like any of the other kinds.
