i made almond crusted tilapia - and everyone liked it (Ava asked for seconds!) except Samantha who wouldn't even touch it.
i pulverized almonds into almost a "flour" but still some chunks with my mini cuisinart chopper thing. i think it might have been about half cup or a bit more. added some whole wheat white flour - 2 heaping soup spoonfuls - so maybe 3TB? added some salt to taste and a few shakes of grated parmesan cheese. this was all mixed in a breading dish.
then i melted some butter in another dish and added some olive oil to it after and mixed it. dipped the tilapia filets into the butter mix to coat and then into the almond mix, pressing down to make sure it was well covered.
then i baked it on a foil lined sheet for 20 min on 375. the filets weren't very big or thick, but if they were, i would have done 400 degrees.
i'm eating the leftovers for lunch - yum!
probably not super healthy but i think the almonds and tilapia and olive oil are good for you
