Anyone have chicken recipes that are healthy and easy?
I'm not a huge fan of chicken, but I bought some all-natural breasts at Costco. I need to use one set tonight since they are waiting in the fridge and I'm feel uncreative.

I will often bread them, bake them in the oven and then the last few minutes, I top with some sort of cheese. My boys love this. I often serve with roasted veggies. Not exciting, but easy and fairly quick.
DH is really anti-chicken, so I have to find recipes that hide the taste . This one is good: Garlic Ginger Chicken. This one is pretty good too: Honey Balsamic Chicken.
Most of my chicken recipes aren't very good for you since they are drowning in sauce to cover the chicken flavor!

My favorite way to cook chicken is in a skillet with a little olive oil; brown lightly on one side and cover the other side with seasonings like Chef Purdomme's Poultry Magic (sp) or any variety of seasonings you enjoy (pepper, lemon or garlic pepper, onion or garlic powder, cumin). Flip and while the other side is browning, season the side facing up. After both sides are gently browned, turn the heat down, pour in lemon juice (I use concentrated from the bottle) and/or white wine; about 1/2 cup and about 1/2 cup of soy sauce (low sodium ... note that I don't add salt to the seasonings since even the low sodium soy sauce makes it taste salty). Cover and cook until no longer pink, turning occassionally. Remove chicken and turn the heat up and deglaze the pan, letting the remaining liquid reduce to a sauce; stir constantly ... it will bubble and sizzle. Pour reduced sauce over chicken and serve.
Easy crock pot recipe: put chicken breasts in the crock pot with 1-2 cups of salsa and a cup of white rice. Set on low for about 5 hours. An easy way to shred the chicken is to put the breasts (don't worry if you also get salsa and rice in there) and put it into your kitchenaid with the paddle attachment. Turn it on for about 30 seconds until shredded. We eat this by itself in a bowl, sometimes topped with cheese, or we put it in tortillas with cheese, sour cream, etc. So easy and good.

our 2 favorites are lemon pepper chicken and pesto chicken.
The lemon pepper I juice and zest 2 lemons, add 2-3 tblsp of olive oil, 3 cloves of crushed garlic, a dash of salt and 1 tblsp of black pepper. Let is marinate for atleast 20 mins. Then grill it.
Pesto chicken is really easy.
Put 1/4 cup pesto on the bottom of a casserole dish, put 3-4 chicken breast on top and cover with another 1/4 cup of pesto.
Cover with foil and bake at 375 for 25-30 mins. Then sprinkle with 1/2 cup grated mozzarella cheese and place under broiler until bubbly.
We have also diced up potatos and put them in the dish with another 1/2 cup of pesto and increased the bake time to 35 mins.
I have made it 2 times now, once with homemade jalapeno pesto and the next with a jarred sauce. Both work great and I suggest it with crusty bread to dip in the yummy sauce.
I made this when my SIL and family were here. You could easily cut it down for 4.

I had to use a ceramic 9x11 for some of the chicken because our dutch oven isn't big enough for 6 large pieces. I covered it with foil and it came out (almost) just as good!
